Ingredients:
- 2 cups Haizoom Steam Basmati Rice, cooked and cooled
- Assorted vegetables (cucumbers, tomatoes, bell peppers, onions), diced
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the cooked and cooled Steam Basmati Rice with the diced vegetables.
- Add the chopped coriander leaves and mint leaves.
- In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Drizzle the dressing over the rice and vegetables mixture. Toss gently to coat everything evenly.
